Registered dietician, carolyn o'neil is here with some fun recipes and helpful tips.

Carolyn o'neil: oh, thank you.

Wow.

Yeah, the school year, looking a little different, whether kids are studying in school or at home, or a combination of both, as a dietician, i'm here to bring happy and healthy ideas for meals and snacks.

Speaker 1: and we are here for it.

What advice do you have for all of those busy parents during this season?

Carolyn o'neil: well, as a dietician i always recommend that folks buy the smartest ingredients, so you have the best foundation to build a healthy snack or a meal.

And that means really prioritizing delicious foods.

Yes.

A dietician just said that, but of course they have to pack a nutrition punch.

So take the simple egg, for instance.

I love eggs because they're so versatile in so many recipes and of course so nutritious, but especially eggland's best eggs and let me tell you why.

Compared to ordinary eggs that you may buy eggland's best are richer in micronutrients that really help to support a healthy immune system.

And they get an a in nutrition because listen to this, they've got 10 times the vitamin e, six times the vitamin d and twice as much of the vitamin b12 and the omega3 fatty acids, plus they taste great.

How about this one, this is spinach and egg avocado rolls, and those are served with a greek yogurt and sriracha dipping sauce.

So it makes for a great on-the- go breakfast, or maybe a break in the action in the afternoon when you need a study break.

Speaker 1: and what if we're running out of inspiration and really motivation and it's dinner time.

Carolyn o'neil: oh, okay.

All right.

Breakfast, lunch, dinner.

You know, i say, get those kids in the kitchen.

Let's face it.

They've been spending more time in the kitchen than ever.

And every meal is a family meal these days.

So, really i would say, get the kids involved.

Why not?

You know, and one idea whether it's an afternoon or maybe it is a dinner where you could toss a salad with it is a pizza party.

And these are mini pizzas that i've created with dave's killer bread, killer classic english muffins, and kids can pick their own toppings.

We've got like some vegetables, pepperoni, some ham, obviously the cheese, the pasta sauce.

And these muffins are great for folks who really love that texture and the flavor of conventional english muffins.

But to me add a little bit more of a powerhouse of the whole grains.

These muffins are in a brand new packaging when you're going to the grocery store, fresh new packaging.

The rockin' grains variety, i love these names.

I love them for like an avocado toast and they really do have more whole grains per muffin than any other english muffin out there.

Speaker 1: and it sounds like you have a lot of fun in the kitchen.

Any tips on increasing the fun factor during our meals.

Carolyn o'neil: and i think with kids and cooking, i'm a mom of two.

A lot of people ask me this.

Yes, they can help.

And look at the age groups, obviously.

The little kids, like three to five, they can happily like mixed together things, they may tear up lettuce for a salad.

Obviously come up with ideas, put some shredded cheese on top of stuff.

The older kids crack an egg with the egg, even older, maybe around 10, they can with adult supervision, can slice up the vegetables, keep an eye on the oven.

But the most important thing that i like to remind kids and parents is that when you're cooking, you're doing more than learning about cooking.

You're learning math, right?

When you measure stuff, it's science, when you cooking it, i think.

Obviously it's an art class, this counts as art credit folk, where you having your pizza party and designing your own toppings.

And of course it helps with reading because when you look at that recipe and you see it come to life, i think that's such a great motivator for kids to get excited about reading.

When it turns into foods, healthy meals and snacks that they can enjoy.
