A typical spread at a Memorial Day barbecue might not scream “healthy.” But nutritionists see an opportunity in those gloppy, heavy side dishes. You just have to be sneaky. To cut the fat in potato salad, registered dietitian Patricia Bannan swaps out the mayo for an easy citrus-based vinaigrette. She also sneaks in lentils for added protein and fiber. Dan Churchill is a a chef and performance trainer whose celebrity clients have included Chris Hemsworth. He advises adapting macaroni and cheese to includes chopped broccoli and spinach, whole wheat pasta and olive oil instead of the traditional butter.
